Menu Plan Monday

I feel so unmotivated to menu plan right now. I'm not sure why. But I'm going to press on and do it anyway!

Oh here's something rather humorous. A few weeks ago, I decided I was going to cook up the rest of my garbanzo beans and make hummus. Well, after searching through my cupboards and storage area unsuccessfully for that good sized bag of garbanzos I knew I had, I remembered that I had already cooked them up and hummused them months ago. So now I have to come up with a creative use for my excess of kidney beans. After all, we can only eat so much chili. Any ideas?

M-Probably taquitos dipped in beans with hot sauce. It's going to be a full day. I have my OB intake appointment in the morning, and I'm going to try to go grocery shopping in the afternoon.
T-ham and egg sandwiches on bagels
W-Grilled chicken, pasta, white sauce, and asparagus (it's on sale this week!)
Th-A crock pot soup TBD
F-out of town on a romantic getaway with my amazing husband!
S-ditto

I need to make a whole bunch of over-ripe bananas into a giant batch of banana muffins this week. I'll freeze some for later and use some right away.

Su-sandwiches or a quick pasta of some sort
M-meat loaf and rice
T-lamb roast and roasted potato salad (gotta remember to stock up on spicy brown mustard)
W-chili and honey oat pan rolls
Th-chicken lettuce wrap (I'm going to try adding some rice noodles to the meat/veggie combination to add some carbs)
F-Venison steaks and scalloped potatoes
S-TBD
Su-probably to dinner with friends. If not, something quick and easy.

Sorry no specific recipes for kidney beans, but I would just start throwing handfuls of them into everything. I have a huge bag of black eyed beans and they go into almost every batch of soup I make. I use them in fajitas as well instead of meat.

you can make hummus with them also.

I always add lots of kidney beans to chile. I make my mom's "Kentucky Chile" - a large can of chile, a large can of diced tomatoes, a large can of drained/rinsed kidney beabs, a healthy dash or two of Chile powder, and if the budget permits, some broned hamburger (with onion). Simmer all the ingredients together for a while, and then add a pound of cooked spaghetti.

I also use kidney beans in my 4-bean enchiladas (instructions on my blog - click on menus to narrow down the posts).

A family favorite for kidney beans is my mom's kidney bean salad. It uses kidney beans, hardboiled eggs, celery, onion, mayonnaise, and salt/pepper.

Here's a vegan burger recipe using kidney beans:

1 carrot steamed and mashed, 2 cups cooked kidney beans, 1/2 cup chopped green bell pepper and onion, 2 cups salsa, 1 cup bread crumbs, 1/2 cup whole wheat flour, 1/2 teaspoon ground black pepper


Mash beans and steamed carrot in a large bowl. Mix in green pepper, onion, salsa, bread crumbs, and whole wheat flour. Season with salt, black pepper, and chili powder. Add flour to create a firmer mixture, or more salsa if the mixture is too stiff. Form mixture into patties. Fry the patties for about 8 minutes on each side, or until browned and firm.

Kidney beans are great in vegetable soup. They may even work for a substitute for red beans in red beans and rice.

You're not high maintenance! I also appreciate each of the love languages. But there is always one you most closely associate with. I would encourage you to buy the book! It's really great!
