[blueberry mini-muffins]
This week looks like it will be almost back to normal for which I'm thankful! Here is what I'm planning on making for our dinners:
M-Minestrone soup
T-Pasta with fresh tomato sauce and salad
W-Roasted chicken, mashed potatoes, and green beans
Th-Chicken pot pie
F-Chicken noodle soup and fresh rolls

I like reading your menus! I'm finally doing a menu each week & it really helps with groceries & keeps us from eating out so much. Just curious, what do you do on the weekends?
As for my menu:
M - pork chops, broccoli rice casserole, salad
T - ham, mashed potatoes, green beans
W - Coconut Red beans & Rice (2nd attempt at them)
Th - at the in-laws
F - breakfast (or "brinner" as I call it)
S - nephew's birthday party
S - taco salad
Weekends usually have an odd hodge-podge of meals. I used to try to plan them all out, but I find that it works better to leave them open in my menu-planning because we often do spontaneous things on the weekend (like going over to friends' houses or Benjamin cooking or going picnicking). I found that when I planned all the meals out, the food that I bought for the days that we ended up doing spontaneous changes would sit there and eventually go bad. So now I just plan on spontaneity. If none of the above-mentioned things happen, I make a simple meal of pasta, burritos, or "brinner" or just clean out the leftovers in the fridge.
