~Mix together until well combined:
1/4 cup soy sauce
1/4 cup water
1 teaspoon dried basil
6-8 cloves of garlic (to taste)
1 tablespoon honey
2 teaspoons grated fresh ginger root
1/2 teaspoon pepper
1/2 teaspoon crushed red pepper
~Add and stir well:
4 boneless, skinless chicken breasts sliced thinly or cubed depending on how you plan to cook it
~Marinade for 30 minutes at room temperature or 4-24 hours in the refrigerator.
~If baking the chicken, preheat over to 350 degrees Fahrenheit. Spread the chicken in a single layer on a large baking dish. Bake for 15-25 minutes, until golden brown and juices run clear.
~If grilling the chicken, skewer the cubes of chicken and grill over medium heat, turning as necessary until golden brown and cooked through.
~Serve and enjoy!
Oriental noodles and satay sauce are a more recent addition to my cooking repertoire. My favorite way to have these noodles with savory peanut sauce is paired with Garlic-ginger chicken and broccoli.
~Blend until it forms a smooth sauce (I use my stick blender for this, though a stand blender works too):
1/4 cup rice vinegar
1/4 cup soy sauce
1/4 cup water
3 tablespoons sugar
2 cloves garlic
1 teaspoon ground ginger or 1/2 teaspoon fresh ginger
1/4 teaspoon cayenne pepper
~Simmer over low heat, whisking frequently for about five minutes.
~Meanwhile, cook one 10-14 oz. package of oriental noodles as directed on the package. We have tried various varieties. Thick and thin rice noodles are good though sticky. Our favorite, though, is the oriental egg noodle type. I found them in the oriental section at my grocery store.
~Pour sauce over noodles, toss until well combined, and enjoy.
