friday menu

Since Ben's parents will be visiting for Memorial Day weekend, I'm planning more structured weekend meals this week, starting with Sunday.

S-chicken alfredo and roasted broccoli
M-traditional summer feast: hotdogs and hamburgers, baked beans and corn on the cob, you know the drill.
T-left overs
W-pancakes and fruit
Th-macaroni and cheese and cauliflower
F-to be decided

Oooh, tomorrow is BBQ day at the farm my in-laws are staying at. I've not got any further than that :) The sudden hot weather has meant no-one is that hungry, little one is picking,.. So just going to be using what's in the fridge (lots of veggies). Have a nice weekend!

Well I am a day late but tonight we had Cheesy Roasted Calliflower. It was super yummy.

We'll be grilling sometime this week!! Gotta love the nicer weather to do it in!! Something I'm doing to make it easy is making a big thing of chicken salad. The crunch is what I crave actually. I've been roasting chicken breasts in the oven with rosemary and thyme and olive oil, then cubing and using to make chicken salad. I add a little bit of ranch to the mayo (hey it's not too bad lol if it's not expired ;-) ) although you can do all ranch too! Or even could do a variation with some light dressing or something. Add celery, walnut pieces, sometimes an apple, halved grapes, s&p. Sooo good. It's the roated chicken with herbs that makes it! (You could do like a light version in a tortilla wrap or something with something drizzled over instead of mayo.) We love it so much- having it for an easy meal or just as a good hearty snack with a few crackers. Anyways, lol all that to say I'm making up a big thing of that this week to just have in the fridge. Other than that, I still have to think of something.I've been craving tuna sandwiches a lot. My brother taught me the secret of using lemon pepper. It makes it worlds better. So good.

ok. to clarify that comment, because it sounds like the grilling is connected to the chicken salad and it's not ;-) separate thought-Something I'm doing to make meals & snacks easier....**

Ohh... your in-laws are going to be eating good! :) Grilled steaks tomorrow at my parent's!
